I love latkes, but hate to the process of frying them! It’s stinky, greasy, messy and not healthy! Today I experimented with baking them and was surprised how yummy they came out.
Here is how to make them:
Carrot latkes:
6 Large carrots – grated
a handful of dill – chopped
a handful of parsley – chopped
4 cloves of garlic – minced
3 eggs
3 tbsp spelt flour
1 tbsp melted coconut oil
Directions:
Preheat oven to 350 degrees, line a baking sheet with parchment paper. Mix all the ingredients together (I love to use my hands for this), create latkes with your hands or with a tablespoon and punch them down. Place them on the parchment paper and bake for 30 minutes. Enjoy!
Yellow rice:
In a rice cooker put:
Organic white basmati rice
1/2 tsp salt
1/2 tsp cumin
1/2 tsp turmeric
When done add a little bit of goat butter or coconut oil if you want it to be dairy free. Enjoy!
btw, people worry about white rice being high on the glycemic index, white basmati rice, however, is low on the glycemic index.
