Baked Turmeric Chicken

Baked Turmeric Chicken

Prep time: 30 minutes
Cook time: 45 minutes

Ingredients:

12 skinless chicken thighs – washed and cut to 1 inch pieces

3 carrots – peeled and cut to 1/2 inch pieces

1 large zucchini – cut to 1 inch pieces

1/2 butternut squash peeled and cut to 1/2 inch pieces

1 large onion – cut to 1 inch pieces

1/2 bag of mini potatoes – washed and cut to half if too big

8 garlic cloves – minced

Spices:

1 tbsp sea salt

1 tsp turmeric

1 tsp cumin

1 tsp paprika

1 tsp black pepper

1/3 cup olive oil

Directions:

Preheat oven to 420 degrees. Place all ingredients into a large mixing bowl. In a separate small bowl combine all spices and pour over ingredients. Mix well until everything is yellow-brown from the turmeric and cumin. If you feel there is a need to add more spices feel free to do so. Put everything in a deep baking dish, cover and bake for 45 minutes.
