I made this for Shabbat last week and got many compliments. It is fast, easy and of course healthy and delicious!
Ingredients:
Wild Salmon filet cut the way you like it (I have used Tilapia in the past and it worked as well)
2 red onions cut to quarters
1 Red pepper cut to stripes
1 greed pepper cut to stripes
1 yellow pepper cut to stripes
1/2 butternut squash cut to cubes
1 yellow potato cubed
1 carrot cut into large pieces
* Note: any veggies would work here, especially those that are going bad in the fridge.
Spices:
1/2 cup extra virgin olive oil
1 tsp Himalayan sea salt
1 tsp cumin powder
1 tsp turmeric powder
1 tsp sweet paprika
1/2 tsp cardamom powder
1/4 tsp coriander powder
1/2 tsp black pepper
1/2 tsp fresh thyme or Rosemary
Instructions:
Preheat the oven to 420 degrees.
Combine all ingredients in a large bowl. In a smaller bowl mix all spices together (you should get a paste consistency), pour over fish and veggies and rub everything with your hands.
After everything is well mixed separate the fish and veggies. In a deep baking dish arrange the veggies first and on top the fish. Bake covered for 40 minutes.
