Healthy Homemade Ketchup Recipe

Finally a great recipe for a homemade ketchup! Homemade is so much better and healthier over the store bought crap, it is also tastier and cheaper!

Ingredients:

  • 3 cups grape tomatoes (450g)
  • 1/4 cup sliced onion (35g)
  • scant 1 tbsp apple cider vinegar (or white vinegar) (12g)
  • 1/4 tsp salt
  • sweetener of choice, to taste, or omit for unsweetened ketchup
  • 1/8 tsp powdered ginger (omit if desired)
  • optional: pinch garlic powder or minced garlic

Directions:

Preheat oven to 400 F. Roast first two ingredients 40-45 minutes, or until the tomatoes are shriveled and most of their liquid is absorbed. Then blend with all other ingredients. Let cool before putting in the fridge, and for thickest results leave uncovered a few hours even after putting in the fridge. (Recipe yields 345g, or about 1.5 cups.)

I got this recipe from one of my favourit websites: http://chocolatecoveredkatie.com/2012/08/05/healthy-ketchup/

    Vegan Sour Cream Substitute Recipe

I used this vegan sour cream in my cake which called for a dairy sour cream, and since we wanted the cake to be dairy free (parve) I came up with a great substitute:

  • Harissa-coated tempeh and roasted sweet potato on kale and spinach with cucumber, red onion, pumpkin seeds and tahini dressing.

Harissa Tempeh & Sweet Potato Salad

Roasted sweet potato and spiced tempeh bring warmth to a generous bed of greens. Cool cucumber, pumpkin seeds and lemon-tahini dressing finish this colorful plant-based bowl.

  • Halved hard-boiled eggs, edamame, cucumber, radishes and avocado over butter lettuce and spinach with green herb dressing.

Green Goddess Egg & Edamame Salad

Jam-packed with greens, this creamy herb-dressed salad combines eggs and edamame with cucumber, radishes and avocado. Dill, chives and parsley give the dressing its fresh green character.
